Organic and no-dig.
Slow to germinate.
Enjoy our light soil if there’s enough high-summer rain. We had that this year!
Late to yield.
Most-flavourful after frosts.
Getting them out of the ground like extracting wisdom teeth.

But few crops give such satisfaction.

Today par-cooked, dusted with semolina and oven-

roasted.
